Wheat-free pancakes a la Liz

1/4 c. white rice flour
1/4 c. rye flour (use buckwheat to make it gluten free)
1 tsp baking powder
1/2 Tbsp. applesauce
1/2 Tbsp. honey
1/2 tsp. vanilla extract
1 tsp. cinnamon
1/2 c. water

Mix ingredients and cook as you would a standard pancake. Sprinkle chopped nuts and fruit over the top, then drizzle with honey.
