I just discovered this wonderful food. I got it already made at Trader Joe’s in a tube. Inspired by a recipe I saw someplace (but can’t find again), I made this for dinner on Sunday and am still enjoying the leftovers.

Chicken Lasagna w/Polenta


2 large skinless chicken breasts with rib meat
1 jar of Trader Joe’s garlic lover’s marinara sauce
1 tube of Trader Joe’s polenta
shredded cheese
olive oil


Pour half of the marinara sauce into your slow cooker.

Trim the fat off the chicken breasts and put them into the slow cooker. Cover with the remaining sauce.

Cook chicken on low all day.

Preheat oven to 350 degrees F.

Spread olive oil in 13 x 9 pan to keep lasagna from sticking.

Slice polenta and lay the rounds in the lasagna pan until the bottom is covered.

Shred the chicken and spread it on top of the polenta rounds.

Top with shredded cheese.

Bake for 30 minutes at 350 in your oven or until the cheese is melted and bubbly.

This was yummy and easy. Next time I will probably add a layer of roasted vegetables on top of the polenta before adding the sauce and chicken.
